Some places will - but their currency is the Croatian Kuna. Have known taxi drivers/restaurant owners get very cross when friends tried to pay with Euro.

Haven't had a problem with euros or US Dollers but again I have only been to major cities like Dubrovnik and Split. Croatian Kuna are available at most large Post Offices with no commission charge.
