Hi Mr McGlynn. The advertised time of arrival in Southampton is 7am on 22nd April 2007 however on the two occasions that I have made the Eastbound journey it was slightly earlier. If you choose to carry your own cases, you will be able to disembark just after 8am. Otherwise, you will be given a disembarkation time according to the Deck number of your cabin (priority is also given to Grill Guests). This should be between 9am & 11am. There will be no immigration (if you are a UK Citizen) at Southampton Dock because a UK Customs official will be travelling on the QM2 and you will be asked to provide your passport etc., at some point in the cruise so that all necessary immigration "stuff" can be out of the way before you get back, leaving you to come off the ship and get straight onto the next leg of your journey.
In regard to your other question, at New York your tickets will show you the time at which you should arrive at the terminal to check-in. This varies according to the deck that you are accomodated on. Although you will find that you can board very quickly if you arrive at the allotted time, you can feel free to arrive at any time after 12pm. If you do, you will find more queues etc., but the benefit is that you will have more time to explore the ship before she sets sail at 5pm.
